Christmas is a season for children, or so they say. But I happen to know that Christmas is a season for cookies. Here are a few recipes to give you a head start on one of the happiest of holidays.
Everybody loves peanut butter and chocolate. Here¡¯s a great recipe that employs both. It¡¯s sure to be a hit with kids of all ages.
Peanut Butter Crackles
Ingredients:
1 ? cup flour
1 teaspoon baking soda
1/8 teaspoon salt
? cup unsalted butter or margarine (softened)
? cup creamy peanut butter
? cup sugar
? cup packed brown sugar
1 egg
1 teaspoon vanilla
Additional granulated sugar
Unwrapped chocolate kisses
Preheat your oven to 375 degrees. Mix the flour, baking soda and salt together in a small mixing bowl and set aside. In a large mixing bowl, cream together the butter and two sugars. Add the peanut butter and stir until well blended. Add the egg and vanilla. Stir in the flour mixture and stir until the dough is completely blended.
Roll the dough into 1-inch balls. Roll in granulated sugar. Place the sugared cookie balls on an ungreased cookie sheet about 2" apart. Bake 10 minutes or until slightly browned. Remove from the oven and quickly press an unwrapped chocolate kiss into the center of each cookie. Remove the cookie to a wire rack to cool. Makes about 5 dozen cookies.
Variation: Create a peanut butter cup cookie with the use of a small muffin pan (1 3/4 inch in size). Purchase some holiday mini muffin cup liners and line the pan. Place the sugared cookie balls into the lined muffin pan and bake approximately 10 minutes. Remove the cookies from the oven and immediately place one miniature peanut butter cup into the center of each hot cookie. Carefully remove the cookies from the muffin pan, allow to cool.
Even the biggest Scrooge will have a ball with these simple Snowball Cookies. Made with but a few ingredients, this is a cookie that the kids will really love to help make.
Snowballs
Ingredients:
? cup confectioner¡¯s sugar
1/4 teaspoon salt
1 cup unsalted butter or margarine
1 teaspoon vanilla extract
2 1/4 cups flour
? cup chopped pecans
Additional confectioner¡¯s sugar
In a large mixing bowl, combine ? cup confections sugar and butter; mix well. Add the vanilla. Gradually stir in the flour. Work nuts into the dough. Cover and chill until firm.
Preheat the oven to 400 degrees. Form the dough into 1-inch balls. Place the cookies on an ungreased cookie sheet about 1 inch apart. Bake for 8 to 10 minutes or until set but not brown. Roll in the additional confectioner¡¯s sugar immediately. Cool the cookies on wire racks. Once the cookies have cooled, roll a second time in the confectioner¡¯s sugar. Store the cookies in an airtight container. Makes about five dozen cookies.
Here¡¯s a twist on the traditional fruit cake. This recipe is guaranteed to be eaten and not used as an alternate football.
Holiday Citrus Logs
Ingredients:
1 (12-ounce) package vanilla wafers, crushed (about 3 cups)
1 (8-ounce) package candied cherries, coarsely chopped
1 (8-ounce) package chopped dates (about 1 3/4 cups)
1 cup chopped pecans or almonds
1/4 cup lemon juice from concentrate
2 tablespoons orange flavored liqueur
1 tablespoon white corn syrup
Additional white corn syrup, heated
Additional finely chopped pecans or sliced almonds, toasted
In a large bowl, combine all the ingredients except the additional white corn syrup and finely chopped nuts. Shape the mixture into two 10-inch logs. Brush the logs with the additional heated corn syrup and then roll in the finely chopped nuts or almonds. Wrap the logs tightly and refrigerate for 3 to 4 days to allow the flavors to blend. Cut into 1/4 inch slices when serving. This recipe will yield two 10-inch logs. |
