There are very few of us willing to wake up an extra 30 to 45 minutes earlier to cook up a nutritious and filling breakfast. We¡¯re lucky if we can pour ourselves a hurried cup of coffee or shove one of those unheated toaster pastries in our bag before we rush out the door to begin one in a series of hectic days. Skipping breakfast should never be an option because as you¡¯ve heard a thousand times before, it really IS the most important meal of the day. It provides the energy you¡¯ll need for the day ahead, and, for those dieters out there, it can rev up a stagnant metabolism. Try some of these breakfast-on-the-go ideas.
* Slice up a couple of bananas and freeze the slices overnight. In the morning, dump the frozen sliced bananas, a cup of low-fat milk, a container of plain yogurt and a couple of drops of vanilla extract into a blender. Blend the mixture until creamy for a low-fat and delicious banana smoothie.
* If you would prefer something a little fruitier in the morning, combine half a cup of fresh or frozen strawberries, half a cup of your favorite strawberry-flavored juice, about two ounces of low-fat plain yogurt, a packet of Splenda sugar, and a few drops of vanilla extract. Blend this mixture in the blender for a fruity strawberry smoothie.
* Why not try an old classic: cinnamon toast? Toast two pieces of whole-wheat bread and spread some butter or low-fat margarine on top. Sprinkle with some Splenda sugar and cinnamon for a sweet toasty treat.
* If peanut butter sandwiches are more your thing, toast two pieces of whole-wheat bread and spread with peanut butter. Choose from any of the following toppings to add to your peanut butter sandwich: coconut, golden raisins, sliced bananas, shredded carrots, jelly (of course), plain sunflower seeds or sweet granola.
* Instead of buying a pricey breakfast sandwich on the way to work, toast two frozen waffles, drizzle a little bit of syrup on each side, add a heated breakfast sausage and some of your favorite deli cheese to make a waffle sandwich. Feel free to add some scrambled eggs or honey ham to this sandwich.
* Buy all of your favorite fruits, like kiwi, strawberries, bananas, cantaloupe, fresh or canned pineapple and grapes and toss them together. Drizzle a little bit of honey or Splenda sugar over the top and sprinkle with toasted coconut or add some granola for a tasty fruit salad.
* Yogurt is a great on-the-go breakfast in and of itself. To add some crunchiness to it, pour some granola or crunchy cereal (like Grape-Nuts) into the yogurt cup and mix.
* Take a croissant and fill it with some of your favorite sandwich meats and cheeses (like ham and Swiss cheese), microwave for a few seconds and you¡¯ll have yourself a tasty breakfast melt.
*If you love bagels and cream cheese, try this recipe for a sweet breakfast treat. Combine a quarter cup of sugar, one teaspoon of ground cinnamon and one-eighth teaspoons of freshly ground nutmeg and mix. Toast your bagel the usual way and spread with some low-fat plain cream cheese. Sprinkle the combined mixture over the top (to taste). You can also combine the cream cheese and entire spice mixture beforehand and store in an air tight container for a spread that is ready to go. |
