The crock-pot is a very versatile appliance, especially if you tend to have a busy schedule. Simply add your ingredients, plug it in, turn it on, and after a few hours of simmering, dinner is ready! It¡¯s great no-fuss way to have a home cooked dinner without a lot of work. If you are vegetarian, or just trying to eat more meatless meals, your crock-pot meal choices may seem limited, since most of the crock-pot recipes out there seem to include meat. However, many of these recipes can easily be adapted for non-meat eaters.
For example, chili is a very easy and delicious crock pot meal. Instead of adding ground meat, you can make a vegetarian chili with kidney, pinto or navy beans, tomatoes, onions, peppers, and spices. You can also add TVP crumbles or even tofu! Try different variations, such as adding corn, black beans and salsa for a southwestern chili. And chili freezes well, so you won¡¯t have to worry about leftovers.
Another popular crock-pot item is spaghetti sauce. Pasta sauce seems to taste better when it simmers for a long period of time, and the crock-pot is perfect for this type of cooking. You can saut¨¦ your diced vegetables in olive oil, transfer them to your crock-pot, and then add your remaining ingredients. Carrots, onions, mushrooms, and bell pepper are excellent in spaghetti sauce. Other delicious alternatives are zucchini and even cauliflower. If you plan on adding zucchini, add it during the last 30 minutes of cooking so it keeps its shape (the same goes for potatoes ¨C cooking them for too long will turn them to mush, so add them at the end).
Vegetarian stuffed peppers, made with rice, diced vegetables, and topped with a tomato based sauce are excellent when prepared in a crock-pot. The slow cooking allows the flavor to develop much better than when baked in an oven. Stuffed cabbage rolls can also be made by using rice or barley based filling and simmering with a tomato sauce.
If you like ethnic foods, many ethnic recipes can be adapted to the crock-pot. For example, Indian curries are traditionally simmered over a low flame, but you can use your crock-pot to get the same delicious flavor. One popular curry is cauliflower and potato curry, simmered in a sauce made with onions, garlic, tomatoes, and spices such as turmeric, cumin, and garam masala (a blend of various spices). If you eat dairy products, you can finish the sauce off with a bit of cream for some richness, or if you prefer, coconut milk can also be used to give a twist.
Dal, or Indian style lentils, is another wonderful dish simmered in a crock-pot, not to mention very easy to prepare! Just add lentils, water, diced onions, turmeric powder, salt and cayenne pepper and simmer. Served with white or brown rice, dal is a warming comfort food.
There are many cookbooks on the market now dedicated to crock-pot recipes, and most of these can be modified for vegetarians. Look for recipes where you can make substitutions with TVP, vegetables or beans. You can always omit the meat, but keep in mind that the end result won¡¯t have the same consistency as the original.
Crock-pot cooking is a delicious way to prepare many vegetarian favorites. Not only does it save you time, but it also provides you with a healthier diet, since many crock-pot dishes do not require oil. After trying a few simple crock-pot recipes, this useful item is sure to become a staple in your kitchen.
