Life is chaotic during the week. We have jobs to do, a home to keep in order, kids to raise, pets to care for, and, of course, mouths to feed! Salads can be a fantastic way to give yourself and your family a healthy and hearty dinner. Forget your negative feelings about salads! They are not boring, and they absolutely can be filling, satisfying, and delicious. Try some of these salad ideas, and you will soon be a believer too!
(Note: recipes are designed for one large salad)
Sirloin Nuts for Mandarin Delight
Ingredients:
1-1/4 Cups Baby Spinach Leaves
1/3 Cup Mandarin Oranges (peeled and divided)
1/4 Cup Sliced Almonds
1/4 Lb. Sliced Strip Steak
Dressing- 2 tablespoons vegetable oil, 2 tablespoons white wine vinegar, 2 teaspoons lemon juice, dash of salt, dash of pepper
Directions:
1. Prepare steak to the desired wellness. (Tip: marinate the steak using the same recipe as you are going to use for the dressing for a slightly more defined flavor)
2. In a large bowl, combine spinach, mandarin wedges, and almonds.
3. In a separate bowl, prepare the dressing by combining all of its ingredients.
4. Pour the dressing onto the salad.
5. Toss the salad so that the dressing is evenly dispersed.
6. Add your strips of steak. Serve immediately.
Apple Orchard Grilled Chicken Salad
Ingredients:
1-1/4 Cups Iceberg Lettuce
1/2 Cup Sliced Macintosh Apples
1/4 Cup Crushed Walnuts
1/4 Cup Whole Peapods
1/4 Lb. Sliced Grilled Chicken
Dressing- 2 tablespoons Italian dressing, 1 tablespoon vinegar, 2 tablespoons club soda, 1/8 teaspoon cinnamon, dash of sugar
Directions:
1. Prepare chicken. (Tip: You can also buy pre-sliced grilled chicken at your local supermarket)
2. In a large bowl, combine lettuce, apples, walnuts, and peapods.
3. In a separate bowl, prepare the dressing by combining all of its ingredients.
4. Pour the dressing onto the salad.
5. Toss the salad so that the dressing is evenly dispersed.
6. Add chicken. Serve immediately.
Sassy Tuna Veggie Pasta Salad
Ingredients:
1 Can of Tuna
1 Cup of Cooked Macaroni
1/4 Cup Diced Tomato
1/8 Cup Diced Onion
1/8 Cup Diced Carrot
1/8 Cup Chopped Broccoli
1/8 Cup Grated Parmesan Cheese
1/8 Cup Mayonnaise
Directions:
Combine all ingredients in a large bowl, making sure that the mayonnaise is evenly dispersed. Serve immediately.
Ground Beef Taco Salad
Ingredients:
1/2 Cup Diced Tomato
1/2 Cup Ground Beef
1 Cup Shredded Iceberg Lettuce
1/4 Cup Shredded Cheddar Cheese
1/8 Cup Chopped Onion
2 Hard Taco Shells
3 Tablespoons Pre-made Taco Sauce or Salsa
Directions:
1. In a large bowl, combine the tomato, beef, lettuce, cheese, and onion.
2. Place your taco shells in a plastic bag, and then crush the shells.
3. Pour the crumbled taco shells into the salad.
4. Add the taco sauce or salsa.
5. Toss all ingredients, so that the sauce and crumbled shells are evenly dispersed. Serve immediately.
Italian Grinder Salad
Ingredients:
1 Cup Chopped Romaine Lettuce
1/4 Lb. Sliced Country Ham
1/4 Lb. Pepperoni
1/8 Cup Shredded Provolone Cheese
1/8 Cup Black Olives
1/8 Cup Tomato
1/8 Cup Onion
1/8 Cup Garlic-flavored Breadcrumbs
Dressing- 2 tablespoons vegetable oil, 2 tablespoons vinegar, 1/8 teaspoon garlic powder, dash of salt, pepper, and oregano
Directions:
1. In a large bowl, combine lettuce, ham, pepperoni, provolone, olives, tomato, onion, and breadcrumbs.
2. In a separate bowl, prepare the dressing.
3. Pour dressing over salad, and toss so that it is evenly dispersed. Serve immediately.
Sea Captain's Dream Salad
Ingredients:
1/2 Cup Shredded Iceberg Lettuce
1/8 Lb. Shrimp (You can buy bags of frozen shrimp that are ready to eat, and just need to be thawed)
1/8 Lb. Scallops (You can also buy frozen scallops)
1/4 Cup Imitation Crabmeat
Dressing- 2 tablespoons mayonnaise, 1 tablespoon cold water, 1 teaspoon Worcestershire sauce, 1 teaspoon cocktail sauce
Directions:
1. In a large bowl, combine lettuce, shrimp, scallops, and crabmeat.
2. In a separate bowl, prepare the dressing.
3. Pour dressing over salad, and toss so that it is evenly dispersed. Serve immediately. |
