Chocolate is an addictive treat. Whether eaten plain or made into an extravagant treat it is loved by many, hated by few. Chocolate has been credited with many things from being an aphrodisiac to a health benefit. Chocolate is at the center of some favorite treats. Below are recipes for five of the most popular chocolate treats as well as an explanation of the types of chocolate available.
Before cooking with chocolate there is some general information the cook needs to know. Chocolate ranges from the rich dark chocolate to the faux white chocolate. There are two main forms of chocolate, solid and powder. Solid chocolate is cocoa mixed with sugar, milk and flavoring. Forms of solid chocolate include chocolate chips and squares. When melting solid chocolate it is important to watch the temperature as it burns easily. With continuous stirring and monitoring, though, it is not too complicated. Powder chocolate is mainly in the form of cocoa. Powdered chocolate is dried chocolate liquor and contains no liquids or sweeteners. Do not confuse powdered baking chocolate with drinking cocoa when cooking as this could result in a ruined dish. Most recipes specify which is to be used.
Recipes for chocolate favorites:
Chocolate Chip Cookies
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, packed
1 teaspoon vanilla extract
1 large egg
1 2/3 cup chocolate chips
Preheat oven to 350 degrees F.
Combine flour, baking soda and salt - set aside.
In mixer beat butter, sugars, egg and vanilla until creamy.
Add flour mixture into creamy mixture.
Stir in chocolate chips and mix by hand until well incorporated.
Drop by round tablespoons onto ungreased cookie sheet.
Bake 9 to 11 minutes or until golden. Cool on wire rack.
Brownies
1 cup butter
1 cup water
4 tablespoons cocoa
2 cups flour
1 cup sugar
2 eggs
1 teaspoon baking soda
1/2 cup sour cream
Bring to a boil over medium heat the butter, water and cocoa.
In a separate bowl mix flour, sugar, eggs, baking soda and sour cream.
Pour butter mixture in bowl of flour mixture and mix well.
Pour into a greased 13x9 pan.
Bake at 350 degrees F for 20 minutes.
Devil's Food Cake
2 cups sugar
1/2 cup butter
2 eggs
2/3 cup cocoa
1/2 cup boiling water
1 cup sour milk
1 teaspoon baking soda
2 1/2 cups flour
1 teaspoon vanilla extract
Cream sugar and butter. Add in eggs and vanilla.
Mix cocoa and water - let sit until cool. Add in milk and baking soda.
Add cocoa mixture and sugar mixture alternately into flour until completely mixed.
Pour into two 9 inch greased and floured round pans.
Bake at 350 degrees F for 30 minutes.
Chocolate Pudding
1/2 cup sugar
2 tablespoons cornstarch
1/8 teaspoon salt
2 cups milk
2 large egg yolks, beaten
2 teaspoons vanilla
1/3 cup cocoa
Mix sugar, cocoa, cornstarch and salt in saucepan over medium heat. Add in milk, slowly. Continuously stir until thickened. Bring to boil for 1 minute.
Add in eggs and boil 1 additional minute.
Remove from heat and add in vanilla.
Pour into serving dishes and refrigerate until served.
Chocolate Fudge
2/3 cup sweetened condensed milk
1 1/2 cup miniature marshmallows
1 1/2 cup semi-sweet chocolate chips
1 2/3 cup sugar
1 teaspoon vanilla extract
Boil sweetened condensed milk and sugar for 5 minutes, stirring constantly.
Remove from heat and add in marshmallows, chocolate chips and vanilla.
Stir until everything is melted and well mixed.
Pour into a greased 8 inch pan. Cool and cut into squares.
