With more than 160 species, the sweet potato is a versatile and enjoyable plant food that also is good for you. Loaded with beta carotene, sweet potatoes offer nutrients that may help to protect skin from the sun's harmful rays and reportedly also offers some degree of protection against various forms of cancer. 

The sweet potato should not be confused with yams, which are relatively scarce in the United States and come from a different plant form. Grown in hot, moist climates, the sweet potato enjoys widespread popularity in the South part of the United States, where it is also fed to animals, while its cousin the white potato is favored more in the North. 

Since kids often shun vegetables, the sweet potato offers some fun and tasty variations of the usual vegetable side dish. Here are some fun things to try with your next store-bought or homegrown batch of sweet potatoes:

1. Make a model car, train, spaceship, or airplane. Using the spud as a vehicular body, insert toothpicks on four sides at the bottom of one side. Cut carrots, cucumbers, or squash into medallions and attach one to each toothpick for wheels. Use another toothpick to attach a small white potato to the top of the sweet potato; this will serve as the roof of the vehicle. Carve or stick on decal windows, doors, and other design emblems to create a model work of art. Enter your new creation in a local flower show or keep it at home on display for a few days until the veggies begin to wither.

2. How about sweet potato pancakes for breakfast? Grate a sweet potato and add it to your buttermilk pancake batter. Cook the griddle cakes on a grill until the top bubbles, then turn to brown both sides. Serve with syrup, apple butter, or another choice of topping for a delicious breakfast entree.

3. Try some sweet potato French fries. Use your French fry maker or slice potatoes into long fry shapes. Deep fry them in vegetable oil and serve with ketchup, salt, or vinegar for lunch or a snack and enjoy a delicious change of pace. Drain on a paper towel to absorb excess oil before eating for a healthier version. 

4. Grow a sweet potato vine. Fill a clear potting vase with water. Insert toothpicks on both sides of a sweet potato, and suspend the vegetable into the water. Place the container in a sunny area. Within a few days the potato should sprout. After your new baby vine grows several inches, plant it in another planter with rich soil. Then watch your plant grow for the next several weeks. In spring you can transplant it outside in a garden area to grow your own produce.

5. Add sweet potatoes to a variety of recipes for a healthy variation on an old favorite. Browse the Internet or your local bookstore cookbooks for ideas on how to use sweet potatoes to make candy, cookies, salad toppers, soup additions, and a host of other creative and enjoyable treats. The sweet potato is one of the most versatile veggies there is, so get your kids involved in experimenting with new ideas and recipes.

6. Do a history lesson with your kids on the sweet potato. Christopher Columbus "discovered" this veggie in the New World on one of his early voyages to Honduras and neighboring regions in Central America. From there the sweet potato made its way to England, Spain, and Portugal, India, and other parts of the Old World before returning to the New World through Virginia and eventually New England. Print a world map and have the kids put in stick pins or mark all the places where the sweet potato has been used. Or have them create a timeline of its use over the past several hundred years.
