There is some general information that everyone needs to know about cleaning cookware. When you are washing cookery by hand, use dishwashing soap, because that is what it is made for. Don¡¯t use hand soap or laundry detergent, even if you run out of dish soap, because these can leave soap scum on the pans and may even ruin the finish. Nor should you use dishwasher soap, which can irritate your skin and not work well in the sink.
Avoid putting hot cookware in the water before you let it cool down, as this can cause you to get burned or may damage other dishes or even the sink, depending on what it is made of. With pans that have food stuck on them from overcooking or burning, try soaking the pan in soapy water for several hours or overnight. If you still have trouble getting the pan clean, try a nylon scouring pad. If nothing else works, use a steel wool pad, but be careful not to damage the finish. Always read the directions or see if there is a dishwasher-safe tag on the pan or the box it came in.
Aluminum cookware is soft metal, so always be careful not to scratch it. You should not put it in the dishwasher. Try the nylon pad, or if something stronger is needed, opt for the steel wool pad and make sure you scrub the pan with the grain, not against it.
Calphalon-type cookware is heavy duty and made of anodized aluminum. The pores are chemically sealed. This makes it tough and smooth, plus it will not react chemically to food and is stick-resistant, which makes it easy to clean. When you get ready to use brand-new Calphalon, wash it first in hot, soapy water to remove any oils left from the manufacturing, then rinse and dry it. You can use Ajax or Comet cleanser to help remove residual foods. You should never try to wash this type of cookware in the dishwasher.
Ceramic or glass cookware like Corning ware needs to be checked to see if it is dishwasher-safe on a case to case basis. Like most dishes you wash by hand, use regular dish washing soap. If food has been cooked on, try letting it soak. After you get off what you can, repeat soaking and try to scrub off the rest. You will have to keep doing this until it is clean because anything else will scratch the cookware.
Copper cannot be put in the dishwasher and you cannot use steel wool pads on it. Always use plastic utensils with this cookware because if you scratch it and the pan turns rusty, it will become poisonous. Clean it with a half-cup of vinegar, a half-cup of salt, or a teaspoon of ammonia per quart of water. Some copper should not be used for cooking, so you can just dust or wipe it with a wet cloth.
Cast iron or steel should not be scrubbed with steel wool or anything that might hurt the surface. Soaking and washing it by hand is the only way to get this type safely clean.
In general, microwave cookware can be put in the dishwasher. Just read the directions to see that you are doing it right.
Nonstick pans are the easiest to clean. You can put them in the dishwasher or wash them in the sink. Just be careful not to scratch the finish or coating.
