Spread a generous spoonful of mayonaisse on each tomato slice then sprinkle with parmesan cheese. I like to cut up about 5 nice sized Jersey tomatoes, add 2 cans of chick peas, a handful of fresh chopped basil, 1/2 of a red onion,a couple of pinches of kosher salt and splash with some very fine olive oil, chill and chow. Nothing like rye bread,Dukes mayo,tomatoes,and salt and pepper. It's a daily treat.To make it special we may add cucumber, or bacon and egg. Take French or Italian loaf, cut into one-inch slices, spread pesto on bread and put fresh tomato on top. Delicious! Can top tomato with imported freshly grated Parmesan cheese for an extra delight. I know of very few natives to this area that actually like tomatoes (without being doctored up for salsa) since the ones grown here are mealy and tasteless. thanks! It is truely a blessing. Have had a hard year and money is tight so this has helped my family, and I have told others. They take dontations and I always leave one. DICE YOUR TOMATOES IN A LARGE SAUCEPAN OR POT, ADD OLIVE OIL TO COVER THE BOTTOM OF WHATEVER VESSEL YOU CHOOSE TO COOK IN, ADD FRESH GARLIC, SLICE AND ONION, ADD SALT AND PEPPER (I USE JANE'S CRAZY MIXED-UP SALT IT CONTAINS ALL THE SPICES YOU WOULD NEED TO SEASON) FRESH BASIL AND A LITTLE OREGANO IF YOU LIKE THE TASTE. COOK THE TOMATOES DOWN,KEEP STIRRING, WHEN YOU FEEL IT LOOKS DONE, TOMATOES WILL BE SOFT, POUR OVER PASTA!!!!!!!!! UMMMMM GOOD! WHAT'S LEFTOVER FREEZE! Then put in pot and cook down a bit to get rid of all the water in tomatoes. I put in maybe a teaspoon of sugar also, just to get rid of acid. Then put in containers and freeze.
