Food Porn: Pots de CremePosted Sep 27th 2005 11:03AM by Deidre Woollard If you haven't had enough custard after Sugar High Friday's exploration of the subject check out these pots de creme from Lori at Dessert Comes First. The dessert is basically a very creamy custard, luxe comfort food indeed, especially since it is cooked in cute little dishes that make it seem far more delicate and elegant. Lori discusses the issue of egg yolks--some recipes call for all egg yolks while other recipes are eggs plus egg yolks. Lori says that the all yolks version takes longer. When I'm making custards I tend to veer away from the all yolks recipes, not because of cholesterol fears but because I feel guilty throwing away the whites and yet am too often too lazy to do something with the whites that then lay moldering in the fridge until I accidentally knock them over somehow (I find making lemon meringue pie so satisfying since it uses yolks for the filling and whites for the meringue). These however look completely marvelous and worth the inconvenience. |
