The article offers an interesting look at the matriarchs of Cuban cuisine—las abuelas, or the grandmothers. In particular, Santiago cites Tessie Vaillant de Yanes, a Cuban grandmother pushing the envelope of traditional Cuban home cooking with dishes such as crepes stuffed with ropa vieja or a black bean cheesecake. Two of Vaillant de Yanes’ recipes are also included. |
