Breakfast Pizza with EggPosted Sep 26th 2005 8:17AM by Deidre Woollard I decided I wanted to do a pizza that had an egg cooked on it because it seemed like a bit of a magic trick. Put a raw egg on a pizza and it comes out as instant breakfast, eggs, bacon and bread all together. Well, sort of. I settled on this recipe from the Food Network website and used a standard yeast-based dough. Then I got a phone call and spent nearly an hour chatting with a friend from back home so my ever-patient mate gets credit for the assembly and cooking on this one (he was hungry). Basically the recipe involves layering spinach on dough, creating a barrier of tomatoes around the edges and then putting two raw eggs in the center and sprinkling the whole thing with cheese and bacon. The eggs were supposed to have unbroken yolks but that didn't quite happen. You can see the raw egg swimming around on the pizza here. At this point I was concerned that it might end up sort of disappearing into the pizza as it cooked. As you can see, the eggs cooked up nicely in the middle. We forgot to pre-cook the dough (it was a sleepy Sunday morning) but it didn't matter since I had rolled the crust pretty thin and it came out nicely crisped, if not very brown. The egg thing was a neat trick and they ended up perfectly done, not too runny or overcooked. This recipe could use some sort of sauce though. Maybe a thin smear of tomato paste or perhaps a pesto. It's a great brunch option. |
