A recent article in Forbes details how large restaurant chains like Pizza Hut and Subway are using that idea to their advantage by switching from drab yellow onions to more colorful red ones. With pizza, for instance, yellow onions blend into cheese where red onions don’t. While red varieties of onions are often more difficult to grow, and therefore pricier, many restaurants are making the switch based on consumer tests that show diners choosing foods with red onions over foods with yellow.
