Sheehan is straightforward and solemn, even when he uses words like "momma" and "'taters." Without getting too technical-no talk of regional methods, wet vs. dry, etc.-Sheehan manages to cover most of the bases in his three-minute speech. Big portions, quality sides and the notion that no decor is too informal as long as the meat is good all get mentioned. Barbecue's role as a lubricant in the civil rights movement also comes into play. None of this will come as a shock to barbecue fans, but nevertheless, listening to Sheehan's credo is three minutes well spent.
