The taste of garlicPosted Sep 6th 2005 11:02AM by Nick Vagnoni Garlic hits your mouth in much the same way that chili peppers and wasabi do, according to recently published research from UC San Francisco and Lund University in Sweden. The article linked below can explain the physiological chain of events way better than I can. I did find it interesting that the neural pathways that are used to for the taste of garlic, chili and wasabi are the same ones that respond to hot temperatures in the mouth. Sadly, the article doesn’t go into the reasons behind people’s enjoyment of spicy foods. If anyone can direct me to any good articles about that, please comment. Maybe this guy would know. |
