Apparently people have been in the process of mainstreaming this one for several years. Here’s a fun National Geographic Kids article about tinkering with vegetable colors. Also a USDA Agricultural Research Service article. Apparently one of the goals, aside from making something eye-catching is to propagate this freak strain of cauliflower that’s higher in beta carotene. Really though, when has nutritionally value been a bigger selling point than something now coming in a shade of bright orange? |
