Hacking Food: Brewing beer from milkPosted Sep 12th 2005 10:01PM by Nick Vagnoni Marcel Besnard a former dairy farmer in Brittany, France, is currently producing a beer made from fermented milk. A blend of milk, malt, and the cultures used to make kefir—a yogurt-like beverage—are the components of Besnard’s brew, which he calls Lactiwel. According to Besnard, the beneficial intestinal fauna fostered by the kefir cultures remain present in the beer. He hopes this healthful addition will be an added draw. Don’t expect to get too rowdy though – Lactiwel is only two percent alcohol. In fact, don’t get your hopes up about trying it at all, as Besnard has yet to find a commercial partner to produce the brew in mass quantities. |
