21. Hot Chocolate is a decadant treat for me. Must be made with rich half and half and Ghirardelli cocoa mix. Boiled just right with a dollop of fresh whip cream on top. Always hot chocolate, almost always with milk, or coffee if a pot is made. And instead of marshmallows, i smother my chocolate with tons of CoolWhip. Although most cocoa (as we call it) contains powdered milk anyway, it's much creamier when made with milk. I usually use 1%, FWIW. I would think whole milk might be even _too_ rich. Cocoa is powder dissolved in milk whereas hot chocolate is chocolate melted in milk. Great, now I'm gonna have to go hit wikipedia and figure this out. Valhrona cocoa, equal part cold water, stir to a paste. Add sugar to taste, a bit of vanilla paste, and a pinch of salt, and maybe even a tiny pinch of cayenne. A backpacker magazine reviewed hot chocolate mixes not too long ago, and we love their top pick. Land O' Lakes hot chocolate (available at Costco). I use Ghirardelli also, how have you stopped the problem of the chocolate settling out of the beverage? Its kind of annoying, but then again, maybe I am putt far too much in. Posted at 8:52PM on Dec 19th 2006 by Merhawie 38. Hot chocolate is made with chopped chocolate melted into hot milk. Hot cocoa is made with cocoa, sugar and milk heated together. All the mixes I've seen have dry milk in them, so you can theoretically make them with water, although milk is so much better. The Penzey's mix doesn't have dry milk, but the instructions specify milk. I don't think homemade cocoa made with water would be very good. Posted at 1:46AM on Dec 20th 2006 by Laura 39. My grandmother started spoiling me w/ hot cocoa which she made from scratch using cocoa powder, sugar, cinnamon and milk. Still do the same thing when I have the time or really need a breather from the craziness of my day to day. 50 years late, now tht I'm a big girl, I still make it the same way but now I also add some Amaretto to the mix. I would be bitterly disappointed when ordering a hot chocolate in a cafe only to receive some water with a bit of chocolate in it. How can they charge people for that rubbish?
