Sometimes I want to rip a wrapper off a tiny cupcakes and shove it in my mouth. With these Lemon Meringue Pie Cupcakes from Culinary in the Country, I guess I can...have my cake and eat it, too! Joe baked cupcakes in the usual way, with a batter that is enhanced with lemon zest, then allowed them to cool. To assemble the cupcakes, he cut out small cones from the top of each cupcake, spooned in some of the lemon curd he made, then topped the filled cakes with meringue. To get the gorgeous brown tips, the cupcakes go back into the oven for a few minutes.
