I love omelets. When eggs are made into omelets, they become somewhat like a pizza crust - a blank canvas on which you could put just about anything and make a delicious meal. Chez Pim has riffed on a classic omelet, Omelette aux Fines Herbes, a simple omelette with the addition of chopped fresh herbs like tarragon, chervil, and parsley, by adding chive flowers and sweet peas. She calls it perfect.
