Given that April is National Grilled Cheese Sandwich Month, I couldn't let the month go by without making, eating, and posting about grilled cheese at least once!Everyone has their favorite grilled cheese sandwich, whether it's a slice of Kraft American on Wonder White made at home, or some complex combination of fancy cheeses on fancy bread. People also have their favorite "accompaniments." My Ultimate Grilled Cheese is one I make at home: razor thin slices of sourdough bread filled with extra sharp cheddar cheese and thinly sliced tomatoes. I know tomato soup is a popular accessory to grilled cheese sandwiches, but I prefer just throwing fresh ones into the sandwich to make it easier. I have to cut the crusts off and eat them while I'm standing there over the chopping board, then cut the sandwich into long strips. When I eat them, I feel like I'm eating cheese-filled French fries.Now, what's your Ultimate Grilled Cheese Sandwich?

22. Crazy--I just posted about my ultimate grilled cheese sandwich on my bloggity blog today. We tried out a new tactic: spreading the bread with a cheesy Mornay sauce instead of butter. Crazy good! And inside? Gruyere, Mahon, Shepherd's cheese, and bacon! Whooo! Heart attack city!!

24. My favorite is open faced sharp cheddar on thin french bread then topped with cold slices of tomato and lots of salt and pepper.

25. currently: Brother Juniper's Onion and Wild Rice bread, slathered in butter on the outside, two ounces of Brillat Savarin with one ounce of very thinly sliced Munster, just barely grilled, as it gets extremely gooey, very quickly! Warm and gooey and just golden on the outside!

26. Heat the grill. Rub both sides of thick cut peasant bread with garlic. Light brush with olive oil. Grill one side until toasty. Flip, cover with slices of sharp cheddar. Grill until bread is grilled and cheese is melty. Remove and cover with thick slices fresh cut, ripe jersey tomatoes, a little salt and pepper. Now that is a real grilled cheese sandwich.

31. Fresh jalepenos stuffed with a mixture of 1/3 less fat free cream cheese, ground walnuts, crushed pineapple(drained);wrapped in lean center cut bacon slices and baked or grilled or broiled. You can also mix into the cheese mixture sharp cheddar cheese for a punch of flavor. It is something you will not want to stop eating, however, I would suggest only eating a few!

32. Only thing missing on the sandwiches that have cheese and tomato (I prefer swiss cheese) is onion. The way I do it is to throw butter in the pan, melt it, then sprinkle onion powder (not onion salt) in the butter. After 10 or so seconds, I put the sandich in the butter, move it around to butter it and start cooking. I do butter the top half of the sandwich, so it's all set when I flip it.

33. Whole wheat bread, Nucoa margarine in frypan, dip both slices in melted margarine, assemble 3 slices american, swiss, ham alternately, grill until golden brown and chese is melted. I'm drooling now. I accompnany it with a bowl of fresh fruit.

34. I love grilled cheese sandwiches. This is how my family LOVES them

Fresh bread, buttered
cheddar cheese
colby cheese
cream cheese
little bit of mustard
and if I have any, shaved ham

The cream cheese makes it really rich, but soooo good!

37. My favorite is a combination served at a diner on Long Island when I was in college. GRILLED CHEESE AND TUNA FISH! I can't explain why the combination is so good, but all of us drama students devoured them after a rehearsal or performance.

39. The ultimate grilled cheese sandwich, in my book, is sharp cheddar cheese on potato bread grilled to perfection! I like it like that...with a side of sweet potato french fries! YUMMY!

40. Replace butter with mayonaise, it browns better and gives a wonderful rich flavor no matter what kind of cheese or bread you use...yum!!!
